How Smeg builds its refrigerators
The Smeg refrigerator most people own is the FAB, with its rounded door and chrome handle. Inside, many FAB models cool the fresh-food section with a plate evaporator on the rear wall. The plate frosts while the compressor is running and clears itself between cycles; the meltwater trickles along a groove to a pinhole drain, and from there to a tray on top of the compressor where it evaporates. A crumb or bit of herb in that pinhole is enough to back water up under the crisper drawers. Many FAB models also have a freezer compartment that doesn't defrost itself, so ice builds up there and has to be defrosted by hand. A door gasket that no longer seals lets in warm, humid air, which adds frost and makes the compressor run longer. When a FAB runs all the time and still isn't cold, we check the thermostat, the gasket and the condenser at the back.

Probably not. On many FAB models the freezer compartment is manual-defrost, so ice builds up over time and has to be melted off. Defrosting it every so often is normal. If it ices up very quickly, the gasket may not be sealing, and we check that.
Not necessarily. A torn gasket, a dusty condenser at the back, a thermostat that isn't cycling or a warm, humid room can all keep it running. We test those before looking at the compressor or refrigerant.
