How Hoshizaki builds its refrigerators
Hoshizaki's reach-ins, undercounters and prep tables carry their own condensing units, either on top or in the base, with a digital controller managing temperature and defrost. Kitchen conditions do most of the damage. A condenser breathing air from over a fryer gets a sticky coat that dust clings to. Evaporator fans quit. Gaskets get torn by sheet pans and hotel pans on the way in and out. Condensate lines clog and water shows up on the floor. On prep tables, the cold rail depends on the lid being closed between tickets and on pans staying below the fill line. A controller alarm tells us something is off but not what, so the condenser and fans get checked before any part is swapped.

Get the food into another cooler. Then look at the condenser: if it's matted, brushing it off can buy time. Make sure nothing inside is pressed against the fan cover. If it doesn't recover, call; the fan, defrost and controller are next.
The rail relies on cold air rising around the pans and on the lid trapping it. Lids left up, pans heaped over the line or a weak fan will warm the rail first. We measure the rail, test the fan and controller, and look at what's radiating heat nearby.
