How Everest builds its refrigerators
Whether it's a reach-in, an undercounter, a prep table, a chef base or a back-bar cooler, an Everest refrigerator runs on the same short list of parts: a compressor, a condenser that needs a steady supply of clean air, an evaporator coil and fan inside the cabinet, and a digital controller watching a temperature probe. In restaurant kitchens the condenser is where trouble usually begins, since it breathes the same greasy, floury air as the cooks. As it clogs, run times stretch and the box slowly warms. If the evaporator fan stops, the coil gets very cold while the food around it doesn't. Doors and drawers are opened hundreds of times a day, so seals split and hinges loosen. A drifting probe or a failing controller is less common but quick to test. Condensate drips to a pan that evaporates it; if the drain clogs or the pan heater fails, the water ends up on the kitchen floor.

The chef base is fighting heat from the cooking equipment above it and warm air at the floor. Clean the condenser and look for torn drawer seals first. If both are good, we check the evaporator fan, the controller and whether the system is properly charged.
The condensate system in most cases. Water from the coil runs to a pan that is supposed to evaporate it; a blocked line or a dead pan heater lets it overflow. We clear the line and test the heater.
