How La Cornue builds its stoves

Cooking on a La Cornue every day has its own rhythm, and some of what owners report is normal. Burners with flame safety need the knob pressed for a few seconds, the French top takes its time, and the vaulted oven preheats differently from a fan oven. The real faults tend to be few: a thermocouple that has weakened, an igniter that no longer sparks, an oven thermostat that has wandered, and door hinges tired from carrying a heavy door. Nearly all of it is reachable without moving the range. That matters, because a Château is enormously heavy and usually sits under a hood and against a backsplash built for it. When moving it can't be avoided, we arrange extra people, lay down floor protection and leak-test the gas fitting when it's reconnected.
