How Vulcan builds its cooktops
A Vulcan griddle or hot top is a thick steel plate heated by gas burners underneath, controlled either by manual valves or by thermostats with a sensing bulb for each section. When cooks report a cold spot or one side running hotter, the usual suspects are burner ports narrowed by carbon, a section thermostat that has drifted, or a sensing bulb that was damaged or knocked out of position. Pilots go out from clogged orifices, from air pulled across them by the exhaust hood, and from worn thermocouples. Years of spatter falling past the plate leave a crust on the burners and in the air openings. The fix starts with cleaning the burners and pilots, then a surface thermometer on the plate to see which sections actually miss their settings, before any thermostat is replaced.

Either the burner on that side is partly clogged, or the thermostat controlling that section is out of calibration. We look at each burner's flame and check the plate temperature with a surface thermometer against each setting.
Vulcan's manual for your model gives the schedule, and a high-volume kitchen should lean toward the frequent end. Most uneven-heat and pilot calls start with debris around the burners and pilot openings, so a regular cleaning routine costs far less than any repair.
