How AGA builds its cooktops
A heat-storage AGA has two round plates on top, the hotter boiling plate on the left and the gentler simmering plate on the right, each under a chrome lid lined with insulation. Lids down, the plates hold their heat; lids up, they give it away fast. Slow recovery after a big pot of pasta usually means the heat source is weaker than it used to be or the thermostat has drifted, and on controllable models a plate may have its own element that has aged. A lid that no longer closes snugly, from a worn hinge or damaged lining, leaks heat all day. Range cookers use ordinary gas or induction hobs, where ignition, simmer control and pan detection are the usual complaints.
