How La Cornue builds its cooktops
Most La Cornue cooktops, whether on the range itself or a separate rangetop, light their gas burners with an electric spark and protect them with a thermocouple. Château ranges can also carry a French top, a thick cast-iron plate heated by a burner at its center. It runs hottest in the middle and cooler toward the edges, and the cook slides pans around to find the right heat. When a burner misbehaves, it's usually one of three things: the igniter gives no spark, the burner goes out once the knob is let go, or the flame is ragged and lifts because ports are blocked or the burner head is sitting wrong. A French top that takes far longer than usual to heat may have fouled ports or weak ignition. Older valves can stiffen, making a knob hard to turn.

Most likely the thermocouple, which has to heat up and hold the gas valve open after you release the knob. If it's worn, coated with residue or knocked out of the flame, the burner goes out. Cleaning and repositioning sometimes fixes it; otherwise it gets replaced.
It's meant to heat gradually and run hottest in the center, cooler at the edges, and it takes a while to come up to temperature. If the center never gets properly hot, or it's noticeably slower than it once was, the burner, its ports or its ignition may need attention.
