How Everest builds its freezers
Everest freezers (reach-ins, undercounters and freezer chef bases) defrost on their own. A heater warms the evaporator coil at set intervals, a termination sensor ends the defrost when the coil is clear, and the meltwater leaves through a drain line that usually has its own small heater so it doesn't refreeze on the way out. Each of those parts can fail. A dead defrost heater lets frost build until the coil is solid and the fan can't push air. A dead drain-line heater lets the water freeze in the tube and back up into the cabinet as a sheet of ice. The door opening has a perimeter heater too, which keeps the gasket from freezing to the frame; without it the door sticks and the gasket tears. A bad termination sensor ends the defrost too early or lets it overrun and warm the box.

The gasket is freezing to the door frame. A low-wattage heater around the opening normally prevents that, and when it fails the seal sticks and tears. We test the perimeter heater and fit a new gasket once it's working.
Meltwater isn't getting out. The drain line has frozen, usually because its heater quit, and each defrost adds more ice. We thaw and clear the drain, then test the drain heater and the rest of the defrost system.
