How Vulcan builds its ovens
Vulcan builds two kinds of ovens that we see: the standard or convection oven under a restaurant range, and the freestanding convection oven, often double-stacked. The range ovens are the simpler ones. Many light from a pilot that burns all day, with a safety valve that closes if that pilot dies, and hold temperature with a mechanical thermostat. The convection ovens move heat with a blower wheel at the back and usually won't fire the burner or elements unless that blower is running. Their door switches tell the blower when the door is closed, so a worn switch can leave a heated oven with no fan. Gas convection models use electronic ignition with flame sensing rather than a standing pilot. Mechanical thermostats on either type drift over years of heavy use.

On many models the fan runs only when the door switch confirms the door is closed, so a worn or misaligned switch is the first suspect. After that, the blower motor and its wiring. Don't run the oven for service without the fan, since heat can build unevenly.
Common reasons are a partly clogged pilot orifice, a draft from the hood or a nearby door, or a thermocouple that no longer generates enough voltage. We clean the pilot, check the flame and test the thermocouple output.
