How La Cornue builds its ovens
The curved roof of a La Cornue oven does the job a convection fan does in other ovens, rolling hot air around the food, so many models cook evenly with no fan at all. Gas versions heat from a burner beneath the floor, controlled by a thermostat, and models with flame safety use a thermocouple that closes the gas if the burner goes out. Electric versions use elements and a thermostat. Because the vault relies on trapped heat, the door gasket and hinges matter a lot: a flattened gasket or a door hanging slightly crooked bleeds heat and shows up as uneven or slow baking. The other common complaints are a thermostat that has drifted and a thermocouple too weak to keep the oven burner lit.
