If ignition is normal, we check the temperature sensor's resistance, which should rise steadily with heat, and compare the actual cavity temperature with the setting. On an electric oven we test the bake and broil elements for continuity, look for blistering, and confirm the relay on the control board actually sends voltage. Uneven baking can also come from a failed convection fan or a door gasket that leaks heat.
Gas safety in an old kitchen
If you ever smell gas, leave the house and call the gas company before calling anyone else. For ordinary repairs, it helps to know where the range shutoff is. In older homes here it's usually a valve on the pipe behind the oven or in the basement directly below the kitchen. We check the connector and valve as part of the visit.

As the igniter ages, its resistance rises and it takes longer to reach the current that opens the gas valve, so gas may build briefly before it lights. That delay is the classic sign. We measure the igniter's draw and replace it if it's out of range.
