What the self-cleaning condenser does and doesn't do

Yes, in most restaurant kitchens. The brush keeps dry lint off the screen, but grease lets dust stick and some reaches the coil. Pull the screen periodically and look; if the coil fins are coated, they need cleaning.
The cold rail works by circulating air around the pans. Lids left up during service, pans stacked above the line, a blocked return path or a failing fan all warm it. We check the airflow and fan, then the controller.
