How Perlick builds its ice makers

A Perlick undercounter ice maker makes clear ice, and like most clear-ice machines it freezes the water gradually as it circulates, so dissolved minerals stay behind in the leftover water rather than ending up in the cube. That works well, but those minerals have to go somewhere, and scale slowly builds on the freezing surfaces until harvest slows and eventually stops. Getting rid of melt and rinse water is just as important. Depending on the model, water leaves by gravity or through a small pump, and a blockage in that path leaves water standing in the bin or seeping onto the cabinet floor. Outdoor units add a third possibility: a supply line, valve or drain that froze on a cold night. We check water in, water out and scale before touching the refrigeration side.

Not necessarily. The water line, valve or drain may have frozen, which stops production. Once it thaws, it may start again, but ice can also crack a valve or fitting. We check the lines and valve before looking at anything else.

Making clear ice means the minerals are left in the water instead of in the cube, and they settle on the parts that do the freezing. Cleaning on the schedule in the manual keeps production up. If it stays slow after cleaning, we test further.
