How Hoshizaki builds its ice makers
Inside a KM cuber, a pump sprays water upward into rows of cups on a stainless evaporator plate, and the ice forms there, upside down. A thermistor on the evaporator outlet tells the board when a batch is ready. Then harvest begins: hot gas from the compressor warms the plate from inside while fresh water flows across its back, and the crescents drop into the bin. A float in the reservoir says when there is enough water to start freezing, and a bin control halts production once the ice reaches it. When output falls or cubes look wrong, the usual findings are scale on the plate and spray nozzles, a float stuck with slime, or a pump that has lost pressure. Flakers and cubelet machines are built differently, around a freezing cylinder and an auger.
